Fiesta is best known for its signature QuesaBirria tacos, crafted through a perfected 9–10-hour cooking process. The result is a rich, slow-cooked filling served in double corn tortillas with mozzarella, onions, cilantro and consommé.
It’s one of the dishes that defines the Fiesta menu, alongside favourites such as Chicken Tinga and Mojo Pork tacos.
